Zucchini bread

My brother-in-law has a fantastic garden. He gave me a zucchini from his garden, so I decided that this was the perfect opportunity to make zucchini bread. I have never made zucchini bread before and only tasted it once. I was excited to try this bread recipe. To my surprise, it was super easy to make and really tasty to eat!


Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.


Beat eggs, oil, vanilla, and sugar together in a large bowl.
Add sifted ingredients to the creamed mixture, and beat well.


Stir in zucchini and nuts (I didn't use nuts) until well combined.
Pour batter into prepared pans.


Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.


Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons ground cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/4 cups white sugar
  • 3 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts

Directions

  1. Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).

It has been 1 year for simplyJUDYBLIGH. 
I love blogging and hope to keep it going strong...hopefully even more posts than last year. For the first year, I posted 101 times. Not bad!

Kitty Chow



How to make this easy, fun, treat! It is called Kitty Chow!
6 c. Crispix
3 c. Cherrios
3 c. pretzel twist
3 c. peanuts
3/4 lbs. M & Ms
1 lbs. white chocolate (almond bark)

Mix all dry ingredients without M & Ms. Melt white chocolate and then stir in with dry ingredients. Add M & Ms. Lay out on a baking sheet to cool. Once cooled, place all in a bowl and take to a party, share, and ENJOY!
